IndiBeirut: A Collision of Cultures

2 min read

For Origin Barbecue, running a food pop-up was never about just feeding people. It was always about experimenting, collaborating, crossing borders and occasionally breaking a few rules.

Bringing different cultures together over fire, food and a shared appetite for something unique and inspiring, is the very beating heart of our business!

Last weekend, we welcomed Chef Hassan into the kitchen. He’s been covering a few shifts for us over the summer, but we’d never had the opportunity to get stuck in and cook together properly.

The result was a show-stopping MezThali, our IndiBeirut collision of cultures: A culinary journey east, from my mother’s homeland of Lebanon to Hassan’s native India.

Two countries with extraordinary food histories, a deep respect for spice, hospitality and the simple pleasure of feeding people well.

ON THE TRAY

Lebanese spiced pulled lamb, harissa tandoori chicken, hummus, brinjal ganoush, halloumi, sumac onions, raita, hot sauce, batata harra and flatbreads.

The result was a glorious mass of traditional family recipes, flavours, influences and ideas that probably wouldn’t satisfy the purists on either side.

But then again, that’s half the fun.

GOOD FOOD, COOKED PROPERLY

As we head towards our fifth year of running food events and our third year at our permanent home, it feels like a good time to remind ourselves why we started doing this in the first place.

We have never been in the fast-food business.

We are in the business of good food, cooked properly, with patience, fire and a little bit of soul.

Sometimes that means doing things the hard way... So be it.

If you’re planning to visit over the coming weeks, drop us a message. We cook fresh, we cook to order, and we’d rather take a little longer than compromise on what ends up on your plate.

Autumn is upon us. The days are getting shorter, the fires are still burning and there’s plenty more to explore.

Wishing you all a happy and peaceful autumn, wherever you are and whatever is happening in your corner of the world.

Thanks for coming along on this strange and wonderful journey with us!
